authoritative: How would I go about the “once a week cooking” for vegetarians? What freezes well?
I have been wanting to have a “cooking day” in my weekly schedule so I will only have to cook the weeks dinners in one day, and freeze them. I am having a hard time thinking about what to make that freezes well that is vegetarian? I have a small family just my husband and 18 month old daughter. Any suggestions? Oh and I am also new to cooking so please not too many ingredients that would be hard to find or meals that are very difficult! Thanks!!

Lasagna freezes well and so do beans(which can be served with totillas) and soups(creamy or vegetable).

Vegetable soup freezes great, and meatless chili.
Soups generally freeze well. Minestrone, pumpkin and other veggie soups. Pies freeze well. Vegetarian Sheppard’s or cottage pie freeze well. Just substitute lentils for the meat in the recipe. Google the recipe. Vegetarian lasagne and cannelloni freeze well. Cook sauces for pasta that are tomato based and freeze then just cook the pasta on the night and reheat the sauce.
the ingredients, but I can tell you that I have a Food Saver, and everything I bag in their air-tight bags come out GREAT!!!!!
Whatever you freeze in those bad-boys really keep the taste in and the frost out.
If your going to freeze, I highly suggest this machine and their bags. You can stick anything you want in them!!!
